Lemon Acid

How to make Lemon Acid!

Ingredients:

  • Zest of 3 lemons (no pith)
  • 100g sugar
  • 70g citric acid
  • 10g malic acid
  • 6g tartaric acid
  • 2g salt
  • 900ml warm water (to rehydrate after)

Instructions:

  1. Combine lemon zest, sugar, citric acid, malic acid, tartaric acid, and salt in a sealed container.
  2. Let mixture rest overnight.
  3. Rehydrate the mixture with 900ml of warm water.
  4. Stir until all ingredients are dissolved.
  5. Double Strain into a fresh container
  6. Store in a clean, airtight container.
  7. Use as needed.

Additional Notes:

  • Lemon acid can be stored in the refrigerator for up to  3 months.
  • Lemon acid is a concentrated ingredient, so use it sparingly.
