
How to make Lemon Acid!
Ingredients:
- Zest of 3 lemons (no pith)
- 100g sugar
- 70g citric acid
- 10g malic acid
- 6g tartaric acid
- 2g salt
- 900ml warm water (to rehydrate after)
Instructions:
- Combine lemon zest, sugar, citric acid, malic acid, tartaric acid, and salt in a sealed container.
- Let mixture rest overnight.
- Rehydrate the mixture with 900ml of warm water.
- Stir until all ingredients are dissolved.
- Double Strain into a fresh container
- Store in a clean, airtight container.
- Use as needed.
Additional Notes:
- Lemon acid can be stored in the refrigerator for up to 3 months.
- Lemon acid is a concentrated ingredient, so use it sparingly.
